Leftover Khichdi Kebabs Recipe

Khichdi cutlet is a wonderful dish with leftover khichuri. So crunchy outside and so deliciously chewy inside, this savoury treat made with khichdi, enhanced with onions, chillies, coriander leaves, spices and gram flour, shaped into flattened discs and pan-fried to a crispy brown, is an excellent way to jazz up leftover dal rice! So simple, yet so very tasty.

Ingredients

  • cups Leftover Khichdi
  • 1 medium Onion, finely chopped
  • 2 Green chillies, finely chopped
  • 2 tbsp Coriander leaves, finely chopped
  • ¼ tsp Salt
  • ¼ tsp Lemon juice
  • tsp Garam masala
  • ¼ cup Besan/Gram flour
  • 2 tbsp Oil

Instructions

  • To make khichdi patties, take leftover khichdi in a bowl and mash well.
  • Add all the ingredients except oil and mix well.
  • Make small balls of the khichuri mixture and gently flatten them.
  • Heat oil in a non-stick frying pan. Place the khichdi patties on the pan and fry them to a nice brown.
  • Remove onto a kitchen towel
  • Serve hot Khichdi Kebabs with tomato ketchup or green chutney.
