Green Plantain Fry Recipe

Fried plantain is an absolutely delicious vegetarian dish that goes well with rice and sambar. Green plantain fry is a popular dish in Andhra cuisine. In this South Indian aratikaya fry recipe, raw plantains are cut into round slices,tossed with spicy masalas, then cooked on low heat till golden brown. You just can’t stop eating these!

Ingredients

For marination:

  • 2 medium Raw Plantains
  • ¼ tsp Turmeric powder
  • ¼ tsp Cumin powder
  • ½ tsp Coriander powder
  • ¼ tsp Red chilli powder
  • ½ tsp Salt

For tempering:

  • ¼ tsp Mustard seeds
  • tsp Asafoetida
  • 1 sprig Curry leaves
  • 1 Dry red chilli
  • 2 Garlic cloves
  • 2 tbsp Oil

Instructions

  • Wash and peel the plantains. Immerse in water. Pat dry.
  • Slice the plantains into discs.
  • Take a mixing bowl and add the plantain slices and the dry spices – salt, turmeric, cumin, coriander and red chilli powder. Mix well. Keep the aratikaya slices aside for 10 minutes.
  • Heat oil in a frying pan. Add mustard seeds, curry leaves and dry red chilli. Sauté for a few seconds and then add garlic and hing. Stir for 10 seconds.
  • Add the marinated aratikaya slices and combine well.
  • Cover and cook over low-medium heat, stirring regularly till the plantains are nicely browned.
  • Remove and serve Spicy Fried Plantains with rice and sambhar. Plantain Fry tastes best when served hot out of the pan.
