Aratikaya Vepudu – Andhra Spicy Fried Green Plantain | Aratikaya Fry

Aratikaya Vepudu or Crispy Fried Plantain features raw green plantains thinly sliced, sprinkled with spices and fried to a crispy brown. I love plantains fries and once you try these flavourful fried plantains, you’ll be hooked!

Raw plantains are called Aratikaya in Telugu.

Aratikaya Fry Andhra Style tastes yummy served hot.  It makes for a great side dish with your meal – try serving fried plantains alongside a rice dish.

Plantains are a staple food in Indian cuisine. Raw green plantains are firm, starchy and a good source of energy. Green plantains are loaded with Vitamin A (essential for vision), Vitamin C (protects your immune system), high fibre (good for digestion) and Potassium (regulates blood pressure).

Aratikaya Vepudu Recipe:

Green Plantain Fry is a traditional dish in Andhra. The beauty of this Aratikaya Fry recipe lies in its simplicity – simple fare, simple to prepare – yet so incredibly tasty. Whenever I pick up raw plantains from the local veggie seller, this is my go-to recipe. The flavours are just amazing and aratikaya fry pairs beautifully with Rice and Sambar/Rasam.

The delicious fried plantain slices, each coated with freshly-ground spices and fried to a golden brown perfection, are just irresistible.

  • To make Aratikaya Vepudu Andhra Style, firstly take firm raw plantains, wash and peel the skin. Then, immerse in water or they tend to blacken. Pat dry and cut into thin round slices.

  • Next, place the aratikaya slices in a mixing bowl and add salt, turmeric powder, cumin powder, coriander powder and chili powder. Toss well to ensure even distribution. Set the plantain slices aside for 10 minutes.

  • Now, heat oil in a pan and temper with mustard seeds, curry leaves and a broken dry red chilli. Sauté well over medium heat.

  • Then, add the garlic cloves and asafoetida. Stir for a few seconds.
  • Next, add the marinated raw plantain slices and mix all the ingredients well.

  • Cover and cook on a low-medium flame, stirring occasionally. Once the plantain slices turn a crispy golden brown (takes about 15 minutes), then, turn off the gas.

  • Serve Aratikaya Vepudu with hot rice, Sambar or Rasam.

Green Plantain Fry Recipe

Fried plantain is an absolutely delicious vegetarian dish that goes well with rice and sambar. Green plantain fry is a popular dish in Andhra cuisine. In this South Indian aratikaya fry recipe, raw plantains are cut into round slices,tossed with spicy masalas, then cooked on low heat till golden brown. You just can’t stop eating these!

Ingredients

For marination:

  • 2 medium Raw Plantains
  • ¼ tsp Turmeric powder
  • ¼ tsp Cumin powder
  • ½ tsp Coriander powder
  • ¼ tsp Red chilli powder
  • ½ tsp Salt

For tempering:

  • ¼ tsp Mustard seeds
  • tsp Asafoetida
  • 1 sprig Curry leaves
  • 1 Dry red chilli
  • 2 Garlic cloves
  • 2 tbsp Oil

Instructions

  • Wash and peel the plantains. Immerse in water. Pat dry.
  • Slice the plantains into discs.
  • Take a mixing bowl and add the plantain slices and the dry spices – salt, turmeric, cumin, coriander and red chilli powder. Mix well. Keep the aratikaya slices aside for 10 minutes.
  • Heat oil in a frying pan. Add mustard seeds, curry leaves and dry red chilli. Sauté for a few seconds and then add garlic and hing. Stir for 10 seconds.
  • Add the marinated aratikaya slices and combine well.
  • Cover and cook over low-medium heat, stirring regularly till the plantains are nicely browned.
  • Remove and serve Spicy Fried Plantains with rice and sambhar. Plantain Fry tastes best when served hot out of the pan.
