  • To make Jaggery Dosa, sieve wheat flour and rice flour. Transfer into a mixing bowl.
  • Add grated jaggery and a pinch of salt.

Jaggery Dosa Ingredients

  • (Alternatively, melt the jaggery by placing grated jaggery and about ¼ cup of water in a small saucepan. Heat on low, stirring occasionally, until the jaggery fully dissolves. Strain, allow to cool slightly, and then add the jaggery syrup to the dry ingredients).
  • Gradually add water and make a thick but pourable consistency batter.

  • Heat a tawa and grease with oil.
  • Take a ladleful of batter and pour it into the centre.

  • Flip the dosa over and let cook for 1-2 minutes.

Ingredients

  • 1 ½ cups Whole wheat flour
  • 1 cup Grated jaggery
  • 1 cup Rice flour
  • Salt a pinch
  • Water – as needed
  • Oil for cooking

Instructions

  • In a mixing bowl, combine wheat flour, rice flour, grated jaggery and salt. (You can also use melted jaggery - in a small saucepan, add grated jaggery and a little water, around ¼ cup. Heat on low until the jaggery melts completely, stirring occasionally. Strain and let it cool slightly. Then add to the jaggery syrup to the dry ingredients).
  • Add water gradually to reach a smooth, thickish but pourable batter consistency
  • Heat a dosa pan or non-stick skillet over medium heat.
  • Lightly grease the pan with ghee or oil.
  • Pour a ladleful of batter in the center.
  • Cook until golden brown on one side (around 2-3 minutes). Drizzle a little ghee or oil around the edges.
  • Flip and cook the other side until cooked through.
  • Remove onto a plate.
  • Repeat with the remaining batter.
  • Serve Bellam Attu hot, drizzled with a little extra ghee if desired.
