Ingredients

  • 10 small potatoes

For Crispy Potatoes:

  • 4 tbsp cornflour
  • 2 tbsp plain flour (maida)
  • ½ teaspoon salt
  • cup water
  • Oil for deep frying

For Cajun Sauce:

  • ¾ cup mayonnaise
  • ½ cup milk
  • ¼ tsp salt
  • 1 tsp red chilli flakes
  • ½ tsp pepper powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika (Red chili powder)
  • 1 tsp mixed herbs (oregano, thyme, parsley, rosemary)

For Garnish:

  • 1 small onion chopped
  • 1 tbsp coriander chopped
  • 1 green chill finely chopped
  • 1/8 tsp paprika

Instructions

  • For Cajun-style Potato Recipe, firstly wash the potatoes well. Pressure cook the potatoes with skin-on for 2-3 whistles on high.
  • Transfer into a colander and allow to cool.
  • Flatten each potato slightly between palms (or use a fork or the bottom of a glass to flatten).
  • Take plain flour, cornflour and salt in a bowl. Add water and mix well to make a lump-free slurry.
  • Now heat oil for deep-frying in a pan over medium heat.
  • Dip the flattened potatoes into the prepared batter and gently drop them in the hot oil.
  • Deep-fry till golden brown on all sides. Remove and place on absorbent paper.
  • Now, take mayonnaise in a mixing bowl. Add salt, pepper, milk, onion powder, garlic powder, red pepper flakes, cayenne pepper (or red chilli powder), mixed herbs (oregano, thyme, parsley). Mix well using a whisk for a smooth consistency. If too thick, add a little milk.
  • Now place the deep-fried potatoes in a serving dish. Pour the creamy Cajun sauce over them.
  • Garnish spicy Cajun Potatoes with finely chopped onions, cilantro and a sprinkling of cayenne powder.
