- 2 eggs
- ½ tsp vanilla extract
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1/3 cup curd
- 1/8 cup freshly squeezed mosambi juice

- Preheat the oven to 170°C and grease a 9 inch loaf pan.
- In a large mixing bowl, whisk together the wheat flour, baking soda, and salt.
- In a separate bowl, whisk the butter, brown sugar and granulated sugar till the mixture is light and fluffy
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla essence and sweet lime juice.
- Stir in the sweet lime zest.
- Gradually add the dry ingredients and curd to the wet batter in alternating portions, beginning and finishing with the wheat flour.
- Mix gently until just combined. Be careful not to overmix, as this can make the bread dense.
- Pour the loaf batter into the prepared pan and smooth the top with a spatula.
- Bake at 170°C for about 40 minutes or until a toothpick inserted into the center comes out clean.
