  • 1 ½ cups whole wheat flour/atta
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp sweet lime zest
  • 1/2 cup butter – room temp
  • 2 eggs
  • ½ tsp vanilla extract
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1/3 cup curd
  • 1/8 cup freshly squeezed mosambi juice

Instructions

  • Preheat the oven to 170°C and grease a 9 inch loaf pan.
  • In a large mixing bowl, whisk together the wheat flour, baking soda, and salt.
  • In a separate bowl, whisk the butter, brown sugar and granulated sugar till the mixture is light and fluffy
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in the vanilla essence and sweet lime juice.
  • Stir in the sweet lime zest.
  • Gradually add the dry ingredients and curd to the wet batter in alternating portions, beginning and finishing with the wheat flour.
  • Mix gently until just combined. Be careful not to overmix, as this can make the bread dense.
  • Pour the loaf batter into the prepared pan and smooth the top with a spatula.
  • Bake at 170°C for about 40 minutes or until a toothpick inserted into the center comes out clean.
