2tbspsweet lime zest
1/2cupbutter – room temp
2eggs
½tspvanilla extract
½cupbrown sugar
¼cupgranulated sugar
1/3cupcurd
1/8cupfreshly squeezed mosambi juice
Instructions
Preheat the oven to 170°C and grease a 9 inch loaf pan.
In a large mixing bowl, whisk together the wheat flour, baking soda, and salt.
In a separate bowl, whisk the butter, brown sugar and granulated sugar till the mixture is light and fluffy
Add the eggs, one at a time, mixing well after each addition.
Stir in the vanilla essence and sweet lime juice.
Stir in the sweet lime zest.
Gradually add the dry ingredients and curd to the wet batter in alternating portions, beginning and finishing with the wheat flour.
Mix gently until just combined. Be careful not to overmix, as this can make the bread dense.
Pour the loaf batter into the prepared pan and smooth the top with a spatula.
Bake at 170°C for about 40 minutes or until a toothpick inserted into the center comes out clean.
Allow the sweet lime bread to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
