Prawn Masala Curry – Spicy Curried Prawns Andhra Style

This authentic tasting Indian prawn curry is simple and quick to make and it’s best served with Basmati rice or garlic Naan and a traditional salad.

Prawn Masala Curry Recipe:

Prawn Masala Curry is an easy and appetising prawn recipe. This seafood dish is light with a wonderful blend of colour and fresh flavours. A family friendly recipe that’s definitely worth making again and again!

  • For this prawn masala curry, take 1kg of medium sized prawns and de-vein and wash them well.

  • Then add 1 tbsp of vinegar and mix well. Keep aside for 10 minutes. Vinegar helps rid the prawns of their smell.

  • Then wash the prawns again and sprinkle salt, turmeric and red chilli powder. Mix well and marinate for 10 minutes.

  • Meanwhile, peel, wash and roughly chop one large onion, peel and chop 1” ginger, slit two green chillies and peel 7 cloves of garlic.

  • Put them all in a mixie jar and grind to a paste. Keep aside.

  • Wash and finely chop 1 large tomato and set aside.

  • Heat 2 tbsp of oil in a pan and fry the marinated prawns in batches till they get a light colour on them.

  • Remove the sauteed prawns and keep aside.

  • Add one tbsp. of oil to the same pan and put in curry leaves.

  • Saute for about 30 seconds and then tip in the ground masala.

  • Then add ½ tsp salt to the masala paste.

  • Sauté the onion masala for about 10 minutes till it turns brown.

  • Next put in the chopped tomato and cook covered till it softens.

  • Once the tomatoes are nicely mashed, sprinkle red chilli powder, coriander powder, cumin powder and garam masala powder.

  • Mix all the ingredients well.

  • Now add the sauteed prawns to the spiced masala paste.

  • Combine everything well so that the prawns are coated well with the masalas.

  • Pour water, stir and cook covered for about 10 minutes.

Once the gravy thickens and the prawns are done, transfer to a serving bowl.

  • Finally garnish with chopped coriander leaves.

  • Serve authentic Prawn Masala Curry with hot rice or an Indian flatbread.

Masala Prawn Curry Recipe

Ingredients

For marination:

  • 1 kg medium sized prawns
  • 1 tbsp. vinegar
  • ½ tsp Salt
  • ½ tsp Turmeric
  • ½ tsp Red Chilli Powder
  • 2 tbsp oil for frying the prawns

Grind to paste:

  • 1 large onion
  • 2 green chillies
  • 1 inch ginger
  • 7 cloves garlic

For Prawn Curry:

  • 1 tbsp oil
  • 2 sprigs of curry leaves
  • 1/4 tsp salt
  • 1 medium tomato
  • 1 tbsp red chilli powder
  • 1 tbsp coriander powder
  • 1 tsp cumin powder
  • ½ tsp of garam masala powder
  • 1 tbsp chopped coriander
  • 1 ½ cups of water

Instructions

  • For this masala prawn curry, clean/devein the prawns and wash them well. Take the cleaned prawns in a bowl and add a splash of vinegar. Mix well and keep aside for 10 minutes.
  • After 10 minutes, wash the prawns under running water and pat dry. Marinate the prawns with salt, turmeric powder and red chilli powder and leave aside for ten minutes.
  • In the meantime, roughly chop one large onion, 1” ginger, two green chillies and seven garlic cloves. Take them all in a grinder and grind them to a smooth paste. Set aside.
  • Finely chop a large tomato and keep aside.
  • Then, place a large pan over medium flame and heat 2 tbsp of vegetable oil. Gently drop the marinated prawns and fry till they turn slightly golden. Drain the flightly fried prawns into a bowl and set aside.
  • Now pour another tablespoon of oil into the same pan and sizzle curry leaves. Saute till the leaves turn crisp and then add the prepared masala paste. Sprinkle salt and fry the ground onion paste for about ten minutes till it turns brownish.
  • Then drop in the chopped tomato, stir well, cover and cook till the tomato becomes soft and pulpy.
  • Remove the lid, and add all the spice powders - red chilli powder, cumin powder, coriander powder and garam masala powder. Combine well and cook till the oil begins to separate.
  • Now tip in the lightly sautéed prawns and mix all the ingredients together. Add water to the prawn masala, stir well and close the lid. Allow the curry to simmer for about 10 minutes till the prawns are tender and gravy thickens. Do not overcook the prawns or elese they will become rubbery.
  • Garnish with coriander leaves and serve savoury Prawn Masala Curry with steamed rice for a truly satisfying meal.
