For sautéed mushrooms recipe, firstly wipe clean the mushrooms with a damp kitchen towel. Then place the mushrooms in a colander and rinse them until any dirt washes away. Then pat the mushrooms dry.
Heat butter and oil in a large pan over medium high.
Once the butter has melted, add the onions and sauté till they become soft and translucent.
Next add the mushrooms and toss with all the ingredients. Allow the mushrooms to sit in the mixture, without stirring, for 1-2 minutes.
Now cook over medium-high, while stirring occasionally, until the mushrooms turn golden brown and tender, about 5 minutes. The mushrooms will release a lot of liquid.
Stir in the garlic and cook for a minute or two.
Season with salt, pepper and red chilli flakes, stirring occasionally, until most of the liquid dries out and the mushrooms are tender.
Turn off the heat and add a dash of lime juice. Combine well.
Sprinkle with coriander and remove.
Serve sautéed mushrooms in garlic butter as side with rice or over pizza or pasta.
