Watermelon is my quintessential summer favourite. Frozen watermelon popsicles, made with fresh fruit, are the perfect summertime treat. Super-chilled, fruity and refreshing, they’ll cool you off and slake your thirst in one go. So let’s dive into this easy watermelon recipe and make your summer days even more delightful!
- For this watermelon popsicle recipe, firstly rinse the watermelon under cool running water to remove any dirt or contaminants from the surface.
- Cut the watermelon into half. Cut each half in half again, creating four quarters.

- Take one quarter and carefully slice along the curve of the rind to remove it, following the shape of the fruit. Repeat with the other quarters.

- Cut the watermelon into small chunks, removing any seeds if necessary.

- Place the watermelon chunks in a blender or food processor.

- Blend until smooth. If the mixture is too thick, add a little water (up to 1/4 cup) to achieve a pourable consistency.

- (If you prefer a smoother texture without any pulp, pour the blended watermelon through a fine mesh strainer into a mixing bowl. Use a spoon to press the pulp and extract as much juice as possible. Discard the pulp.)
- Add 1 tablespoon of fresh lemon juice to the watermelon juice. If you like a stronger lemon flavor, you can also add a teaspoon of finely grated lemon zest.
- Add a pinch of salt. This enhances the sweetness of the watermelon and adds a refreshing twist.

- 3 cups watermelon juice
- ½ tsp Himalayan pink salt
- 1 tbsp sugar
- 1 tbsp lemon juice
Instructions
- Start by cutting the watermelon into cubes. Remove the seeds to ensure a smooth consistency for the popsicles.
- Place the cubes in a mixer and process until smooth. If the mixture is too thick, add a little water. (For a smoother consistency, you can pour the watermelon juice through a fine mesh sieve.)
- Add the salt, sugar and lime juice. Mix everything well. Taste the mixture and adjust accordingly.
- Pour the mixture into molds, upto ¾ full (leave a gap as liquip expands in the freezer). Cover and insert the popsicle sticks.
- (In case you don't have popsicle molds, use paper cups and wooden sticks.)
- Place the filled popsicle molds in the freezer.
- Freeze for 2-4 hours, or until completely set.
- To remove the popsicles from the molds, run the bottom of the molds under warm water for a few seconds. This will loosen the popsicles, making them easier to remove.
- Gently pull on the sticks to release the popsicles.
