Lemony Watermelon Ice Pops are a wonderful way to beat the heat. This incredibly refreshing icy summer treat is my go-to thirst-quencher.

Ingredients

  • 3 cups watermelon juice
  • ½ tsp Himalayan pink salt
  • 1 tbsp sugar
  • 1 tbsp lemon juice

Instructions

  • Start by cutting the watermelon into cubes. Remove the seeds to ensure a smooth consistency for the popsicles.
  • Place the cubes in a mixer and process until smooth. If the mixture is too thick, add a little water. (For a smoother consistency, you can pour the watermelon juice through a fine mesh sieve.)
  • Add the salt, sugar and lime juice. Mix everything well. Taste the mixture and adjust accordingly.
  • Pour the mixture into molds, upto ¾ full (leave a gap as liquip expands in the freezer). Cover and insert the popsicle sticks.
  • (In case you don't have popsicle molds, use paper cups and wooden sticks.)
  • Place the filled popsicle molds in the freezer.
  • Freeze for 2-4 hours, or until completely set.
  • To remove the popsicles from the molds, run the bottom of the molds under warm water for a few seconds. This will loosen the popsicles, making them easier to remove.
  • Gently pull on the sticks to release the popsicles.

Notes

  • Add in some chopped fresh mint or basil for a refreshing herbal note, or mix in some small chunks of fruit like kiwi, mango or strawberries for added texture.
  • To sweeten, you can also use honey, maple syrup, or cane sugar
  • For a creamier texture, blend some whole milk, Greek yogurt or coconut milk into the watermelon juice
