Start by cutting the watermelon into cubes. Remove the seeds to ensure a smooth consistency for the popsicles.
Place the cubes in a mixer and process until smooth. If the mixture is too thick, add a little water. (For a smoother consistency, you can pour the watermelon juice through a fine mesh sieve.)
Add the salt, sugar and lime juice. Mix everything well. Taste the mixture and adjust accordingly.
Pour the mixture into molds, upto ¾ full (leave a gap as liquip expands in the freezer). Cover and insert the popsicle sticks.
(In case you don't have popsicle molds, use paper cups and wooden sticks.)
Place the filled popsicle molds in the freezer.
Freeze for 2-4 hours, or until completely set.
To remove the popsicles from the molds, run the bottom of the molds under warm water for a few seconds. This will loosen the popsicles, making them easier to remove.
Gently pull on the sticks to release the popsicles.
