Tips for Perfect Sojne Posto

  • ✅ Choose fresh drumsticks: Look for firm, green pods that are not excessively dry or woody.
  • ✅ Cut evenly: Similar-sized pieces help the drumsticks cook uniformly.
  • ✅ Grind the posto finely: A smooth paste gives the curry a cohesive, creamy texture.
  • ✅ Soak the poppy seeds: Let the poppy seeds soak for a while to soften them, making it easier to grind them into a smooth paste.
  • ✅ Use mustard oil for authentic flavour: Heat it until it just begins to smoke, then let it cool slightly before adding the tempering ingredients.
  • ✅ Cook the potatoes and drumsticks until tender: Drumstick pods should soften while retaining their shape.
  • ✅ Add the posto paste near the end: This helps preserve its flavour and reduces the risk of sticking or scorching.
  • ✅ Cook over low heat: Poppy seed paste tends to thicken quickly and may stick to the bottom of the pan, so stir gently and maintain a low flame to prevent burning.
  • ✅ Adjust the consistency: Add warm water gradually if the curry becomes too thick.
  • ✅ Serve fresh: The nutty aroma and texture are especially enjoyable when the curry is freshly cooked.
