Alu Bhate – Bengali Mashed Potatoes | Alu Makha

Alu Bhate Bengali is my all-time favourite mashed potatoes recipe! These homemade soft and comforting mashed potatoes Bengali style are perfectly rich, full of great flavour, easy to make, and impossible to resist. Bengali Alu Bhaate is indulgently piquant, perfectly seasoned and smothered with mustard oil!

Alu Bhate or Alu makha simply translates to mashed potato (alu) with rice (bhate). While mixing the mashed potatoes with chopped onions, green chillies along with mustard oil enhances the flavour, you can also make the dish with just mashed potatoes, ghee/butter and salt.

If you love good, old fashioned mashed potatoes, this is the perfect Bengali recipe. Simple, delicious, and just pure flavor. This is the most popular potato dish in Bengali households! Making these homemade, flavourful, tender and smooth mashed potatoes is so easy. You just can’t go wrong with this classic Bengali recipe for comfort food!

There is no excess of spices. It’s only the goodness of potatoes, cooked till tender, mashed and combined with green chillies and onions, with a generous splash of mustard oil.

  • For this popular Bengali mashed potatoes recipe, firstly take three medium potatoes and place them in a pressure cooker with sufficient water.  Pressure cook them on high for three whistles.
  • Once the pressure releases, drain the water and place the potatoes in a colander.
  • Peel the potato skins. Place the peeled potatoes in a bowl.

  • Mash the potatoes well, to a smooth, lump-free mixture.

  • Now season with salt and mix well.

  • Next, add the chopped onions and green chillies. Mix well.

  • Lastly drizzle the mustard oil and combine well.

  • Transfer the mustard oil drenched mashed potatoes into a serving dish.

  • Serve Bengali Alu Bhate with steamed rice and red lentil dal.

Alu Makha Bengali Recipe

Sigh. Alu Makha. It’s such an integral part of Bengali cuisine. No Bengali meal is complete without a big bowl of dreamy and yummy mashed potatoes. Alu bhate is incredibly soft, easy to make and the perfect addition to any meal.

Ingredients

  • 3 medium potatoes
  • 1 small onion optional
  • 1 green chilli optional
  • ¼ tsp salt
  • 1 tbsp mustard oil

Instructions

  • For this Alu Bhate recipe, pressure cook 3 medium potatoes in their jackets until soft, but not mushy.
  • After the pressure comes down, transfer the boiled potatoes into a colander to drain out the water.
  • Set aside to cool. Then peel the aloo and place them in a mixing bowl.
  • Mash them well.
  • Sprinkle salt and mix well.
  • Add the chopped onions and green chillies and combine well.
  • Now drizzle mustard oil generously and mix well.
  • Serve Bengali Alu Makha warm with rice or as a side with dal chawal.
