Karela Tikkis Diabetic Friendly Snack – Bitter Gourd Cutlets

Karela Tikkis Diabetic are so easy to make and have a great flavour! They barely make the table as they are almost eaten straight out of the frying pan! Kids will love them as they have no idea they are eating veggies they try to avoid the most! This is a delicious way to use fresh karelas.

The tikkis soften lightly in the centre, while the exterior gets nice and golden brown. These easy karela tikkis are fantastic as an appetizer, finger food, or a side dish.

Bitter Gourds are the most diabetic-friendly foods. Loaded with iron, magnesium, potassium, vitamin C, and fibre, bitter gourds have antidiabetic, antivirus, anticancer, anti-inflammation and cholesterol lowering effects. So be sure to include bitter gourd in your diet.

I’m always on the lookout for easy and flavourful ways to add bitter gourd to any meal. And now, if you have 30 minutes and a handful of pantry and fridge staples, you have the easiest and tastiest way to eat your karelas: Diabetic Friendly Bitter Gourd Cutlets.

Karela cutlets are so delicious and satisfying. They have a beautiful colour and they hold together nicely. They are extremely flavourful and not the least greasy. Bitter gourd cutlets are the perfect side dish!

  • For the karela tikkis, firstly wash the bitter gourds well and top and tail them.

  • Slit the bitter gourds in half vertically and remove the seeds.

  • Grate the bitter gourds without peeling the skin.

  • Sprinkle a little salt over them and mix well. Set aside for 10 minutes.

  • Meanwhile, boil the green peas.

  • Strain them. Mash them lightly and keep aside.

  • Wash and grate the carrot, crumble the paneer. Chop the coriander leaves and make the green chilli paste.

  • Now, squeeze out the water from the grated karelas with your hands and keep the water aside. You can drink the bitter gourd juice as it’s a great detox drink.
  • Now, in a mixing bowl combine the grated karelas, grated carrots, crumbled paneer, green peas, chilli paste, coriander leaves. Now add the bread crumbs for binding.

  • Sprinkle salt, pepper and dry mango powder.

  • Combine well.

  • Form golf-sized balls from the mixture.

  • Lightly flatten the round balls. Keep aside.

  • Now heat a non-stick pan and grease it using a teaspoon of oil.
  • Place the karelas on the pan.

  • Cook them over medium heat, drizzling a teaspoon of oil over them.

  • Flip them over.

  • Cook for a further 5 minutes until golden brown.

  • Remove the cooked bitter gourd tikkis with a slotted spoon onto a paper towel.

  • Transfer the karela tikkis onto a serving plate.

  • Serve delicious Karela Tikkis Diabetic Friendly with mint chutney.

Bitter Gourd Cutlets

Bitter gourd tikkis are bursting with flavours and have a delicious texture! Sneak karelas into any meal with Karela Tikkis that come together in minutes and pair perfectly with tomato chutney.

Ingredients

  • ½ cup bitter gourd grated
  • ¾ cup carrot grated
  • ¾ cup green peas boiled
  • ½ cup paneer crumbled
  • 2 tbsp. coriander leaves
  • ½ - ¾ cup bread crumbs
  • 1 tsp green chilli paste
  • ½ tsp dry mango powder
  • ¾ tsp salt
  • ¼ tsp pepper
  • 2 tsp oil

Instructions

  • To make these bitter gourd tikkis, wash the karelas and chop the ends.
  • Cut them in half longitudinally and remove the seeds.
  • Grate the bitter gourd.
  • Place the grated bitter gourd in a colander and sprinkle lightly with salt. Let the bitter gourd sit for 10 minutes. Then using your hands, squeeze out as much liquid as possible.
  • Transfer the bitter gourd to a large bowl. Add the grated carrot and paneer, green peas, salt, pepper, amchur powder, chilli paste, coriander leaves.
  • Mix well till nicely combined.
  • Add the bread crumbs and combine well.
  • Make small golf-sized balls and lightly flatten with your palms. Keep aside.
  • Place a non-stick pan over medium heat and add oil.
  • Once the oil heats up, arrange the tikkis on the pan.
  • Cook the tikkis for 5 minutes then flip them over. Drizzle a little oil on the tikkis. Continue cooking the tikkis for a further 5 additional minutes until they’re golden brown and crispy.
  • Transfer the tikkis to serving plate.
  • Serve these Healthy Bitter Gourd Cutlets with pudina chutney or ketchup.
