  • For this refreshing summer drink recipe, firstly wash and peel the cucumber and chop into small pieces.
  • Also, wash and pick the mint leaves. Keep aside.

  • Then pour coconut water into the blender.

  • Add cucumber, lime juice, lime zest, sugar and mint leaves to it.

  • Blend for 30-60 seconds until almost well combined but still retains some visible mint and cucumber flecks.

  • Shake the mixture well, fill glass with ice, and top with coconut water, cucumber, mint mixture.

  • 4 cups coconut water
  • 1/2 cup cucumber chopped
  • 1/2 cup mint leaves
  • 2 tbsp lime zest
  • 1/2 cup fresh lime juice
  • 2 tsp sugar/honey optional
  • Ice cubes

Instructions

  • Take coconut water, cucumber, lime juice, sugar and mint leaves in a mixie jar.
  • Blend to a smooth mixture.
  • Pour into tall glasses filled with ice cubes.
  • Serve chilled Coconut Mint Refresher.
