I love my homemade French Fries with an extra something. These garlic cheese fries are a great combination – perfectly double-fried French fries with a hint of herby garlic and smothered in cheese. This is a great way to put a twist on ‘plain old’ French Fries.
Cheese Fries is a yummy snack recipe that no one can resist! This cheesy delight is the perfect side for any meal.
- To make these Garlic Cheese French Fries, firstly wash the potatoes well to remove any dirt. Peel the skin and keep the peeled potatoes immersed in water.
- Now take one potato at a time and cut them in half. Then vertically slice each half into 1 cm thickness.
- Then cut each slice into sticks of 1 cm thickness. Keep immersed in water.
- Once you’ve cut all the potato slices into sticks, rinse them well a couple of times in fresh water.
- Then add the potato sticks to a large bowl and cover with cold water. Let sit for 30 minutes. Soaking the raw fries in water helps remove excess starch from the potatoes.
- Meanwhile, peel and finely chop 10 garlic cloves.
- Grate the cheese and keep aside.
- After 30 minutes transfer the potatoes into a colander. Drain the excess water.
- Then place the raw potato sticks on a paper towel lined tray in a single layer to dry them out completely. This is important or else they will splatter when added to hot oil.
- We will now fry the raw fries twice. We will first fry them at a lower temperature to cook the potatoes. Then we will fry them a second time at a higher temp to make the outsides crispy.
- Heat oil for deep-frying in a wok over medium heat.
- Now gently drop half the raw potato sticks into the oil, taking care not to overcrowd the pan.
- Fry the potatoes over medium heat for about 3 minutes, stirring them occasionally.
- Remove the once-fried potato sticks with a slotted spoon onto a paper towel lined plate. Place them in a single layer to drain while you fry the next batch. The first batch should cool down to room temperature before being re-fried.
- After deep frying the second batch of potatoes, remove onto paper tissue.
- Now increase the heat to high. Drop the first batch of fries back into the hot oil.
- The oil will sizzle and bubble. Keep turning over the fries for uniform cooking. Once the fries turn crisp and golden, about 3 minutes, remove with a slotted spoon onto paper towels to drain extra oil.
- Then add in the second batch of potato fries and deep fry for about three minutes till nice and crispy. Remove with a slotted spoon onto the paper napkin lined plate.
- Now transfer the fresh French fries into a bowl and sprinkle salt. Toss to coat well. Keep aside.
- Melt a little butter in a wide pan over low heat.
- Add the chopped garlic and saute for a minute to release all the flavours.
- Now add the twice-fried potato sticks to the butter and stir to coat the fries evenly in the garlic butter.
- Then add the grated cheese to the fries.
- Mix well to coat the double fried potatoes.
- Sprinkle mixed herbs.
- Mix well to combine.
- Remove the Herbed Fries into a serving dish.

Garlic Cheese French Fries
Ingredients
- 4 medium potatoes
- Oil for deep frying
- 1 tsp butter
- 10 garlic cloves
- ½ cup shredded cheese
- ½ tsp salt
- 1 tsp mixed herbs
Instructions
- For the Garlic Cheese Fries recipe, firstly wash the potatoes well and peel them. Place them in a bowl of cold water.
- Cut the potatoes lengthwise. Then place each half cut-side down and slice lengthwise into 1 cm thick slices.
- Stack the slices and cut into sticks lengthwise.
- Place the potato sticks in a colander and rinse under running water to remove excess starch. Once the water runs clear, place them in a bowl of ice water and let sit for 30 minutes.
- After 30 minutes, drain the water and place the raw fries on a paper towel lined tray. Pat the potato sticks dry with paper towels to remove any excess water.
- We will now double fry the fries. This makes them soft in the inside and crispy on the outside.
- Heat oil for deep frying in a wok over medium heat. Add the fries, in batches to the hot oil, taking care not to overcrowd the pan. Fry the potatoes for about 3 minutes. The fries should be halfway cooked, though still pale.
- Remove with a slotted spoon onto a paper towel. Let the first batch of fries cool while you fry the second batch.
- Increase the flame to high and cook the once-fried potato sticks again. Fry them till they are golden and crisp.
- With a slotted spoon, remove the double-fried fries from the oil and drain on a paper towel.
- Now fry the second batch of potato sticks the same way.
- Transfer the twice-fried potato sticks into a bowl. Season with salt and toss well. Keep aside.
- Now melt 1 tsp of butter in a wide frying pan over low heat.
- Add the garlic to the melted butter and sauté gently for about a minute. The garlic flavour slowly infuses into the butter.
- Then add the double-fried French Fries to the butter and garlic, and mix well to evenly coat the fries.
- Now add the grated cheese and herbs and stir well again.
- Remove the delicious herb salted fries into a serving dish.
