Masala Macaroni – Cheesy Masala Pasta

Masala Macaroni is a delicious pasta recipe cooked desi style with Indian spices and masalas. A fusion of Italian pasta coated with Indian flavours, masala pasta is a family favorite recipe, loved by both kids and adults. Perfect for a wholesome dinner or as a holiday side dish!

Cheesy Pasta

Masala Macaroni Recipe:

Masala Macaroni is a delicious pasta dish with an amazing Indian twist. This Indian style pasta is spicy, cheesy and is perfect to have for breakfast or lunch. And not only does masala pasta taste wonderful, it’s also packed full of veggies, which only enhance the flavours of the pasta.

  • For the masala macaroni, firstly boil 2 litres of water to which 2 tsp of salt and 1 tbsp oil is added.

Boil water for pasta

  • Once the water comes to a vigorous boil, add the elbow macaroni.

Elbow Macaroni

  • Cook for 10 minutes or according to package instructions. Cook the elbow macaroni until it is al dente or just cooked. It shouldn’t get too soft or mushy or break.

  • Then drain the macaroni in a colander.

Strain the macaroni

  • Drizzle with a little bit of olive oil to keep from sticking.

Add oil to macaroni

  • Now heat 1 tbsp oil and 2 tbsp butter. Then add the chopped ginger and garlic to the pan and saute over medium heat.

  • Now put in the chopped onions and green chillies.

  • Sauté till the onions start to sweat.

  • Next tip in the tomatoes and mix well.

Add tomatoes to pan

  • Cook covered till the tomatoes turn mushy.

Soften tomatoes

  • Once the tomatoes are cooked, add turmeric, red chilli powder, garam masala powder, pepper and salt. Mix well and saute for a minute.

Add spices

  • Next tip in all the chopped veggies and combine well. Cover with a lid and cook over low-medium heat for about 2 mins.

Add veggies to pan

  • Remove the lid and add the cooked macaroni to the masala. Mix well. Sprinkle mixed herbs.

Add cooked pasta

  • Combine all the ingredients well.

Cooked pasta

  • Remove into a serving dish

Serve pasta

  • Serve Masala Macaroni with a sprinkling of grated cheese.

Ingredients

For cooking macaroni:

  • 2 cups macaroni
  • 2 litres water
  • 2 tsp salt
  • 1 tbsp oil

For the masala:

  • ½ tsp garlic chopped
  • ½ tsp ginger chopped
  • 3 green chillies chopped
  • ½ cup onion chopped
  • 1/8 cup capsicum
  • 1/8 cup green peas
  • 1/4 cup carrot
  • 1/8 cup green beans
  • ½ cup tomatoes
  • 1 tbsp olive oil
  • 2 tbsp butter
  • ½ tsp turmeric
  • ½ tsp red chilli powder
  • ¾ tsp salt
  • ¼ tsp pepper powder
  • ¼ tsp garam masala powder
  • 1 tsp mixed herbs

Instructions

  • To make masala macaroni, fill a large vessel with about 2 litres of water. Add salt and oil and bring the water to a boil.
  • Then drop in the macaroni and cook for 10 minutes or according to packet instructions.
  • Drain the water and keep the cooked macaroni aside.
  • Heat oil and butter in a large non-stick pan. Toss in the chopped ginger and garlic and saute for a minute.
  • Add the chopped onion and green chillies and saute over medium heat till the onions turn translucent.
  • Stir in the tomatoes and cook covered till they soften.
  • The add the seasoning – salt, pepper, red chilli powder, turmeric powder and garam masala. Saute for 1-2 minues.
  • Now add the veggies and combine well. Cover and cook for 2 minutes, till the masalas are well blended.
  • Now uncover and add the cooked macaroni to the masala. Toss gently and cook for a further 2 minutes. Mix in some dried herbs.
  • Serve Masala Pasta hot topped with cheese.
