To make masala macaroni, fill a large vessel with about 2 litres of water. Add salt and oil and bring the water to a boil.
Then drop in the macaroni and cook for 10 minutes or according to packet instructions.
Drain the water and keep the cooked macaroni aside.
Heat oil and butter in a large non-stick pan. Toss in the chopped ginger and garlic and saute for a minute.
Add the chopped onion and green chillies and saute over medium heat till the onions turn translucent.
Stir in the tomatoes and cook covered till they soften.
The add the seasoning – salt, pepper, red chilli powder, turmeric powder and garam masala. Saute for 1-2 minues.
Now add the veggies and combine well. Cover and cook for 2 minutes, till the masalas are well blended.
Now uncover and add the cooked macaroni to the masala. Toss gently and cook for a further 2 minutes. Mix in some dried herbs.
Serve Masala Pasta hot topped with cheese.
