What’s Diwali without dried fruit and nuts barfi?! A healthy and tasty sugar-free sweet dish recipe made with natural ingredients, is a delicious Diwali special treat. Dry fruit and nut chikkis without added sugar are a delight to savour.
This dry fruits barfi is the perfect treat for any festive celebration. This naturally sweetened barfi contains no gluten, or eggs or sugar.
How to make mixed dry fruits roll:
To make this healthy and nutritious dry fruit and nut burfi, firstly, finely chop or coarsely grind the dates and figs. (Choose good-quality, chewy soft dates; if the dates are mushy, you will not be able to make the rolls and then you have to add crumbled biscuits or oats to soak up the moisture. If you are using dense or dry dates, then add some butter/ margarine to moisten them). Keep aside.
Then chop or coarsely grind pistachios and cashew nuts. Also blanch almonds and chop into tiny pieces.
Heat ghee in a wide pan. Tip in the chopped or ground date-fig mixture and saute for a couple of minutes or till they soften.
Now add the chopped or ground pistas, cashews and almonds.
Mix well till all the dry fruits are well incorporated and come together as a mass.
Saute for a couple of minutes more. Transfer onto a plate and set aside to cool.
Grease your hands with ghee and shape the dry fruits mixture into a cylindrical log.
Wrap the dry fruit and nuts log in foil.
Refrigerate the dry fruits burfi for about an hour or so.
Take out the roll and cut into roundels with a sharp knife.

Ingredients
Dates - 200 grams
Figs - 200 grams
Cashewnuts - 1/2 cup
Almonds - 1/2 cup
Pistachios - 1/2 cup
Ghee - 1 tbsp
Instructions
To prepare dry fruits chikki, grind the seedless dates and figs coarsely in a mixie and remove into a plate.
Chop or coarsely grind the pistachios and cashew nuts. Blanch the almonds, de-skin and chop finely.
Heat ghee in a non-stick pan and add the dates and figs mixture.
Saute on a low-medium flame for a coupe of minutes till the mixture softens
Fold in the cashew nuts, almonds and pistachios. Sauté the mixture till heated through and mixed fruits and nuts form a thick mass.
Remove from heat and transfer to a plate. Allow to cool slightly.
Knead the mixture into a dough and roll out into a log.
Wrap the log in aluminium foil and refrigerate for about an hour or so.
Remove, unwrap and cut the log into pieces.
Enjoy deliciously yummy mixed fruit burfi!
Notes
You can use any nuts of your choice but keep the ratio of dates to nuts at 2:1, i.e. 2 cups of dates to 1 cup of nuts
You can coat the roll with roasted poppy seeds, desiccated coconut, biscuit powder or rice crispies
You can add cardamom powder, saffron, cinnamon powder, orange or lemon zest for a different flavour
You can mix in crushed wheat biscuits, roasted poppy seeds or roasted oats, chocolate or cocoa powder
