Olan Kerala Onam Sadya | Kumbalanga Olan Curry With Coconut Milk
Olan Kerala style is an integral item of the Vishu Sadhya menu. Olan curry is a traditional Kerala dish and an integral item of the Vishu or Onam Sadhya menu. In Kerala, Sadhya is an assortment of vegetarian dishes usually served on a banana leaf.
Any Sadhya is considered incomplete without Olan. This quick, simple and delicately-flavoured Kerala dish consists of vegetables simmered in coconut milk and flavored with coconut oil and fresh curry leaves. The traditional Sadhya recipe combines ash gourd (kumbalanga) simmered in coconut milk.

Olan is one of the 16 items that are served for Kerala Sadhya or a grand meal. This mildly-flavored side dish is served during the Vishu/Onam Festival.
Olan is a special dish for a special occasion. It is an authentic Kerala Sadhya recipe made with fresh coconut milk and a combination of vegetables. The simplicity of this healthy vegetable dish makes it an all-time favourite!
To make this traditional Kerala Sadhya recipe, firstly cook the green gram dhal in a pressure cooker until done. Keep aside.
Then cook ingredients 1-5 in very little water. Make sure the vegetable don’t become mushy. (You may add salt at this stage.)
Then add the pressure-cooked green gram dhal.
Next grind the grated coconut (with just about ¼ cup of water) and squeeze out coconut milk.
Now add the coconut milk to the cooked ingredients. Heat it for about 2-3 minutes on medium-low flame.
Do not bring it to boil after adding the coconut milk.
Finally, season with curry leaves and a few drops of coconut oil. Keep covered for a few minutes to allow the veggies and green gram dal to absorb the flavours.
Serve Olan Kerala Currywith steamed Rice and Sambar.

Ingredients
Pumpkin - 1 cup,cut in small cubes
Ash gourd - 1 cup,cut in small cubes
Bottle gourd -1 cup,cut in small cubes
Long beans – ½ cup.cut in 2 inch long pieces
Green chilies - 3-4,cut in halves
Green gramwhole – 1 cup (Pressure cooked)
Curry leaves - 4-5
Coconut – ½ a coconut grated
Salt to taste
Coconut Oil – ½ tsp
Instructions
Pressure cook green gram dal. Keep aside
Cook chopped pumpkin, ash gourd, bottle gourd, beans and slit chillies with very little water. Add salt.
Once the vegetables are cooked, add the cooked green gram dal.
Grind the coconut with 1/4 cup water and extract coconut milk.
Tip in the coconut milk extract to the cooked vegetables. Simmer on low flame for about 2-3 minutes.
Add curry leaves and drizzle a few drops of edible coconut oil.
Serve yummy Olan Kerala Curry over hot rice.
Notes
Once the coconut milk is added, don’t boil too much as it will curdle.
