Olan Recipe

Ingredients

  • Pumpkin - 1 cup, cut in small cubes
  • Ash gourd - 1 cup, cut in small cubes
  • Bottle gourd -1 cup, cut in small cubes
  • Long beans – ½ cup. cut in 2 inch long pieces
  • Green chilies - 3-4, cut in halves
  • Green gram whole – 1 cup (Pressure cooked)
  • Curry leaves - 4-5
  • Coconut – ½ a coconut grated
  • Salt to taste
  • Coconut Oil – ½ tsp

Instructions

  • Pressure cook green gram dal. Keep aside
  • Cook chopped pumpkin, ash gourd, bottle gourd, beans and slit chillies with very little water. Add salt.
  • Once the vegetables are cooked, add the cooked green gram dal.
  • Grind the coconut with 1/4 cup water and extract coconut milk.
  • Tip in the coconut milk extract to the cooked vegetables. Simmer on low flame for about 2-3 minutes.
  • Add curry leaves and drizzle a few drops of edible coconut oil.
  • Serve yummy Olan Kerala Curry over hot rice.

Notes

  • Once the coconut milk is added, don’t boil too much as it will curdle.
