Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
In a small mixing bowl combine brown sugar and cinnamon and set aside.
In a large bowl, cream the butter and sugar until smooth.
Beat in the eggs one at a time, making sure each is fully incorporated before adding the next.
Mix in the vanilla extract.
Stir in the flour and baking powder. Add milk and mix until well combined.
The bread batter is now ready.
Peel and dice the apples.
Pour half the prepared batter into the loaf tin.
Place half the diced apples over the batter. Press lightly into the batter.
Sprinkle the cinnamon-sugar mix over the diced apples.
Now pour the rest of the batter of the seasoned apples.
Top with the remaining apples, pressing them lightly into the batter.
Sprinkle the remaining cinnamon-sugar mix over the apples.
Bake for 50-60 minutes, or until a toothpick inserted into the centre of the loaf comes out clean.
Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Slice and serve as desired.
