Preheat your oven to 350°F (175°C).
Lightly grease and flour a 9-inch round cake pan, or alternatively, line it with parchment paper.
In a medium bowl, whisk the flour, baking soda, salt, and cinnamon together until well combined.
In a separate large bowl, cream the butter, granulated sugar and brown sugar until light and fluffy.
Next add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.
Stir in the flour, baking soda, cinnamon and salt.
Fold in the chopped apples and walnuts.
Transfer the batter into the prepared cake pan.
Bake for about 40-45 minutes, or until a toothpick inserted into the centre of the cake comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Cut the apple cake into slices.
Serve fresh Apple Walnut Cinnamon Cake with ice cream.
