For Cajun-style Potato Recipe, firstly wash the potatoes well. Pressure cook the potatoes with skin-on for 2-3 whistles on high.
Transfer into a colander and allow to cool.
Flatten each potato slightly between palms (or use a fork or the bottom of a glass to flatten).
Take plain flour, cornflour and salt in a bowl. Add water and mix well to make a lump-free slurry.
Now heat oil for deep-frying in a pan over medium heat.
Dip the flattened potatoes into the prepared batter and gently drop them in the hot oil.
Deep-fry till golden brown on all sides. Remove and place on absorbent paper.
Now, take mayonnaise in a mixing bowl. Add salt, pepper, milk, onion powder, garlic powder, red pepper flakes, cayenne pepper (or red chilli powder), mixed herbs (oregano, thyme, parsley). Mix well using a whisk for a smooth consistency. If too thick, add a little milk.
Now place the deep-fried potatoes in a serving dish. Pour the creamy Cajun sauce over them.
Garnish spicy Cajun Potatoes with finely chopped onions, cilantro and a sprinkling of cayenne powder.
