- 2 English cucumbers
- 1 medium onion sliced
For the Cucumber Salad Dressing
- ½ cup plain Greek yogurt or sour cream
- 3 tbsp. mayonnaise
- ¼ cup chopped fresh cilantro chopped
- 1 tbsp. white vinegar
- ½ tsp sugar
- ½ tsp salt
Wash, pat dry and slice the English cucumbers thinly. If using garden cucumbers, you may want to peel them first.
Thinly slice the onion. Chop the cilantro.
In a medium bowl, whisk together the Greek Yogurt, mayonnaise, white vinegar, sugar and salt.
Add the sliced cumber and onion to the salad dressing.
Toss gently to coat all the vegetables evenly.
Sprinkle chopped cilantro.
