Ingredients

  • 2 English cucumbers
  • 1 medium onion sliced

For the Cucumber Salad Dressing

  • ½ cup plain Greek yogurt or sour cream
  • 3 tbsp. mayonnaise
  • ¼ cup chopped fresh cilantro chopped
  • 1 tbsp. white vinegar
  • ½ tsp sugar
  • ½ tsp salt

Instructions

  • Wash, pat dry and slice the English cucumbers thinly. If using garden cucumbers, you may want to peel them first.
  • Thinly slice the onion. Chop the cilantro.
  • In a medium bowl, whisk together the Greek Yogurt, mayonnaise, white vinegar, sugar and salt.
  • Add the sliced cumber and onion to the salad dressing.
  • Toss gently to coat all the vegetables evenly.
  • Sprinkle chopped cilantro.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavours to meld.
