To make Egg Bhurji, firstly finely chop onions, green chillies, tomatoes, ginger, capsicum and coriander leaves.
Whisk the eggs and keep aside.
Then heat oil in a non-stick skillet over medium heat and put in the cumin seeds.
Once they start to sizzle, add the chopped onions, green chillies and ginger. Sauté until the onions turn translucent.
Drop in the chopped capsicum and sauté for 1-2 minutes.
Put in the tomatoes and cook till the tomatoes become soft and mushy.
Season with salt, turmeric, red chilli powder and Pav Bhaji Masala.
Sauté till the masalas are well blended.
Add butter and stir till it melts.
Then lower the heat and pour in the beaten eggs.
Using a spatula, scramble the eggs till they are almost cooked.
Garnish with coriander leaves.
Serve Spicy Egg Bhurji with buttered toast or paratha
