Ingredients
- 10 small potatoes
For Crispy Potatoes:
- 4 tbsp cornflour
- 2 tbsp plain flour (maida)
- ½ teaspoon salt
- ⅓ cup water
- Oil for deep frying
For Cajun Sauce:
- ¾ cup mayonnaise
- ½ cup milk
- ¼ tsp salt
- 1 tsp red chilli flakes
- ½ tsp pepper powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika (Red chili powder)
- 1 tsp mixed herbs (oregano, thyme, parsley, rosemary)
For Garnish:
- 1 small onion chopped
- 1 tbsp coriander chopped
- 1 green chill finely chopped
- 1/8 tsp paprika
Instructions
- For Cajun-style Potato Recipe, firstly wash the potatoes well. Pressure cook the potatoes with skin-on for 2-3 whistles on high.
- Transfer into a colander and allow to cool.
- Flatten each potato slightly between palms (or use a fork or the bottom of a glass to flatten).
- Take plain flour, cornflour and salt in a bowl. Add water and mix well to make a lump-free slurry.
- Now heat oil for deep-frying in a pan over medium heat.
- Dip the flattened potatoes into the prepared batter and gently drop them in the hot oil.
- Deep-fry till golden brown on all sides. Remove and place on absorbent paper.
