To make Liver Masala, wash the liver very well, trim and discard any visible fat.
Sprinkle salt, turmeric, red chilli powder and lemon juice and mix well. Leave aside for 10 minutes. Then rinse the liver well and place in a colander.
Meanwhile, finely chop one large onion, one large tomato and a handful of coriander leaves. Wash and pick curry leaves.
Then heat oil in a kadai and add curry leaves and chopped onions.
Fry over medium heat till the onions start to brown. Add ginger garlic paste.
Sauté for a minute till the paste is well mixed with the onions.
Next sprinkle salt, turmeric powder, red chilli powder, cumin and coriander powder, garam masala, fennel powder and pepper.
Sauté over a low flame till all well combined.
Tip in the chopped tomatoes and mix well.
Cover and cook over a low medium flame till the tomatoes soften.
Then add the liver and sauté over medium high for a minute.
Lower the flame and cook covered for 10-15 minutes, stirring occasionally, till the liver is cooked through.
Remove the lid and if there is any moisture left, allow it to evaporate on medium heat for another 1-2 minutes.
Check the seasoning and adjust to taste. Finally, sprinkle chopped coriander leaves.
Remove the fried chicken liver into a serving dish.

For the masala:

Instructions
Wash the chicken liver well. Place the liver in a bowl and sprinkle salt, turmeric, red chilli powder and lemon juice. Mix well and leave aside for 10 minutes. Then rinse well and drain. Keep the chicken liver aside.
In the meantime, chop onions, tomatoes and green chillies. Wash and pick curry leaves.
Heat oil in a pan. Add the curry leaves.
Next put in the chopped onions and fry till brown. Add the ginger garlic paste and sauté till the raw smell disappears.
Then sprinkle the spices – turmeric powder, red chilli powder, coriander powder, cumin powder, fennel powder, garam masala powder, salt and pepper. Combine well.
Tip in the chopped tomatoes. Mix well, cover and cook till the tomatoes turn soft.
Then add the liver and mix well. Sauté it on high for 1 minute.
Cover and cook on low heat for 10 -15 minutes, till the liver is cooked completely.
Remove the lid, turn up the heat to medium and cook till all the moisture evaporates and the dish is dry. Check the seasoning.
Garnish with coriander leaves. Turn off the gas and transfer the liver fry into a serving bowl.
