Chilli Garlic Mushrooms – Glazed Mushrooms With Sesame

This sweet and spicy stir-fry mushrooms is a truly delightful dish where plump and juicy mushrooms are sautéed with spicy green chillies, pungent onions, rich garlic, crispy capsicum, crunchy carrots and coated with a thick glossy sauce. For this Chilli Garlic Mushrooms, firstly rinse the mushrooms well and pat dry. Slice them lengthwise and keep aside.
Cube the onions and capsicum. Finely mince the garlic cloves. Wash, peel and cut the carrots into roundels. Set aside.
Next heat about two tablespoons of oil in a wok or kadai. Add the chopped garlic and saute for a few seconds, to release the garlicky flavour.
Then put in the chopped onions and slit green chillies. Saute for 1-2 minutes till the onions start to sweat.
Add the diced capsicum and carrots and saute for a 1-2 minutes.
Now drop in the sliced mushrooms and toss well to combine.
Cover with a lid and cook for about 10 minutes over low heat.
Mushrooms will release water and will cook in their own juices.
Meanwhile, take the sauces and the cornflour in a small mixing bowl. Mix well and set aside.
Now uncover and check if the mushrooms are cooked.
Once the mushrooms are cooked through, pour the sauce mixture into the pan and coat the mushrooms and veggies with it.
Sprinkle ½ tsp salt and mix well. Sprinkle sesame seeds.
Remove glazed mushrooms from heat. Transfer into a serving dish.
Serve Chilli Garlic Mushrooms over Noodles or Fried Rice.

Ingredients
200gms mushrooms
2medium onionsdiced
10garlic clovesfinely chopped
2-3green chiliessliced
1small capsicum
2small carrots
2tbspsoya sauce
4tbsptomato ketchup
1tspcornflour
2tbspOil
1tbspwhite sesame seeds
Instructions

Dice the onion and capsicum. Finely chop the garlic. Peel and cut the carrots into roundels. Keep aside.
Heat about 2 tbsp oil in a kadai. Drop in the garlic and saute for a few seconds.
Next add the onion and green chillies. Saute till the onions turn transparent.
Put in the capsicum, carrots and saute for a minute.
Then add the mushrooms and combine all the ingredients well.
Cover and cook for about ten minutes over low heat.
Mushrooms release water and so will cook in their own liquid.
Meanwhile, take a small mixing bowl. Add the sauces and cornflour and combine well. Set aside.
After about 10 minutes, remove the lid and check if the mushrooms are cooked.
Once the mushrooms are done, add the sauce mixture to the mushrooms and mix everything well.
Sprinkle ½ tsp salt and mix well.
Remove from heat and transfer into a serving dish.
Sprinkle toasted sesame seeds on top.
Serve Chilli Garlic Mushrooms as a side with Fried Rice.
