  • To make khichdi patties, firstly take the moong dal khichuri in a mixing bowl. Mash it well till there are no lumps.

  • Then add finely chopped onions, green chillies, coriander leaves, garam masala powder, salt (add very little as the khichdi already contains salt) and lemon juice.

  • Mix well. Next add besan and combine all the ingredients together.

  • Divide the mixture into equal sized balls and gently flatten them a little bit.

  • Heat some oil in a non-stick tava over medium heat. Place the khichuri kababs on the pan.

  • Fry them till both sides are golden brown.

  • Finally, remove the browned khichdi patties onto a kitchen towel.

  • Serve Khichdi Kebabs with tomato ketchup or mint chutney.

So crunchy outside and so deliciously chewy inside, this savoury treat made with khichdi, enhanced with onions, chillies, coriander leaves, spices and gram flour, shaped into flattened discs and pan-fried to a crispy brown, is an excellent way to jazz up leftover dal rice! Ingredients

  • cups Leftover Khichdi
  • 1 medium Onion, finely chopped
  • 2 Green chillies, finely chopped
  • 2 tbsp Coriander leaves, finely chopped
  • ¼ tsp Salt
  • ¼ tsp Lemon juice
  • tsp Garam masala
  • ¼ cup Besan/Gram flour
  • 2 tbsp Oil

Instructions

  • To make khichdi patties, take leftover khichdi in a bowl and mash well.
  • Add all the ingredients except oil and mix well.
  • Make small balls of the khichuri mixture and gently flatten them.
  • Heat oil in a non-stick frying pan. Place the khichdi patties on the pan and fry them to a nice brown.
  • Remove onto a kitchen towel
  • Serve hot Khichdi Kebabs with tomato ketchup or green chutney.
