Pudina Pulao Herby and Fragrant – Mint Flavoured Rice

Pudina Pulao is a quick, easy, light and satisfying main meal. This one-pot rice pilaf recipe made with white rice, onions, mint leaves, coconut and spices is perfect for those midweek lunches/dinners. There’s nothing like the fresh taste of mint to brighten up a dish. This mint-flavoured cozy main dish recipe is my absolute favourite.

This fragrant rice dish pairs well with raita and takes under 30 minutes to make! Enjoy the flavour and aroma of this refreshing mint-flavoured rice.

Pudina Pulao Recipe:

Pudina Pulao is surprisingly speedy to make and so flavourful and comforting. Simple and tasty and the flavours are spot on. It’s a wonderful instant rice dish – herby, nutritious and only needs 15 minutes in the pressure cooker to come together!

This Mint Rice is made by sautéing rice along with onion, ginger-garlic, and spices and simmered in a mint-coconut masala until tender and fluffy.

  • To make this Pudina Pulao, firstly rinse 2 cups of rice 3-4 times in water or until the water runs clear. Soak the washed rice in water for 10 minutes. After 10 minutes, drain the rice and keep aside.
  • Meanwhile, take mint leaves, coriander leaves, lemon juice, and grated fresh coconut in a small mixie jar.

  • Add ½ cup water and grind to a smooth paste. Keep aside.

  • Next, slice the onions and slit the chillies. Keep all the ingredients ready.

Pudina Pulao Ingredients

  • Now, heat oil in a pressure cooker.
  • Add the whole garam masala – bay leaf, cinnamon, cardamoms, cloves, star anise and shah jeera and sauté over medium heat until aromatic.

  • Once they start to sizzle, add the curry leaves, onions and green chillies. Sauté until the onions turn light brown.

  • Now add the ginger-garlic paste. Sauté for 1-2 minutes, till the raw smell goes away.

  • Next tip in the prepared ground mint paste.

  • Sauté the mint paste for 1-2 minutes.

  • Now add the soaked and drained rice. Gently sauté the rice for 1-2 minutes.

  • Season with salt and turmeric powder.

Add spice to rice

  • Pour 3 ½ cups water and mix well.

Add water to pudina pulao

  • Close the cooker lid and cook the Mint Rice on high for 2 whistles.
  • Turn off the flame, and allow the pressure to come down.
  • Then open the lid and fluff the mint rice.

Fluff the mint rice

  • Transfer the rice into a serving dish.

Ingredients

  • 2 cups rice
  • 1 bay leaf
  • 1- inch cinnamon stick
  • 4 cardamoms
  • 4 cloves
  • 1- star anise
  • 1 tsp shah jeera
  • 1 sprig curry leaves optional
  • 1 tsp ginger garlic
  • 2 medium onions
  • 3 chillies
  • 2 tsp salt
  • ½ tsp turmeric powder
  • 3 tbsp. oil
  • 3 ½ cups water

Grind to paste:

  • 1 cup mint leaves
  • 1 cup coriander leaves
  • 1 tsp lemon juice
  • ½ cup coconut
  • ½ cup water

Instructions

  • Take mint leaves, coriander leaves, grated coconut, lemon juice and ½ cup water in a mixie jar. Grind to a smooth paste and keep aside.
  • Wash the rice well. Soak for 10 minutes. Drain and keep aside.
  • Heat oil in a pressure cooker.
  • Sizzle bay leaf, cinnamon, cardamoms, cloves, star anise and shah jeera. Saute
  • Then add the onions, curry leaves and green chillies and sauté to a light brown.
  • Now add the ginger-garlic paste and sauté for 1-2 minutes.
  • Next tip in the ground paste and sauté for 1-2 minutes.
  • Then add the washed rice and gently mix with the rest of the ingredients.
  • Sprinkle salt and turmeric powder.
  • Pour in the required water, mix well and close the lid.
  • Pressure cook on high for two whistles. Turn off the heat.
  • After the pressure releases, open the lid and fluff the rice with fork.
  • Transfer the mint pulao into a serving dish.
  • Serve Pudina Pulao with any yogurt based raita.
