Watermelon is my quintessential summer favourite. Frozen watermelon popsicles, made with fresh fruit, are the perfect summertime treat. Super-chilled, fruity and refreshing, they’ll cool you off and slake your thirst in one go. So let’s dive into this easy watermelon recipe and make your summer days even more delightful!
For this watermelon popsicle recipe, firstly rinse the watermelon under cool running water to remove any dirt or contaminants from the surface.
Cut the watermelon into half. Cut each half in half again, creating four quarters.
Take one quarter and carefully slice along the curve of the rind to remove it, following the shape of the fruit. Repeat with the other quarters.
Cut the watermelon into small chunks, removing any seeds if necessary.
Place the watermelon chunks in a blender or food processor.
Blend until smooth. If the mixture is too thick, add a little water (up to 1/4 cup) to achieve a pourable consistency.
(If you prefer a smoother texture without any pulp, pour the blended watermelon through a fine mesh strainer into a mixing bowl. Use a spoon to press the pulp and extract as much juice as possible. Discard the pulp.)
Add 1 tablespoon of fresh lemon juice to the watermelon juice. If you like a stronger lemon flavor, you can also add a teaspoon of finely grated lemon zest.
Add a pinch of salt. This enhances the sweetness of the watermelon and adds a refreshing twist.
If your watermelon is not very sweet, you can add 1 tablespoon of granulated sugar or honey. Blend or stir until the sugar is completely dissolved.
Taste the mixture and adjust the sweetness or acidity if needed. Add more sugar or lime juice to suit your preference.
Carefully pour the watermelon mixture into the popsicle molds, leaving a small space at the top for expansion as they freeze.
Cover with a lid. If your popsicle molds come with sticks, insert them according to the mold’s instructions. If using separate popsicle sticks, wait about an hour until the popsicles are partially frozen before inserting the sticks to ensure they stay upright.
Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.
To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out by the sticks.

3cupswatermelon juice
½tspHimalayan pink salt
1tbspsugar
1tbsplemon juice
Instructions
Start by cutting the watermelon into cubes. Remove the seeds to ensure a smooth consistency for the popsicles.
Place the cubes in a mixer and process until smooth. If the mixture is too thick, add a little water. (For a smoother consistency, you can pour the watermelon juice through a fine mesh sieve.)
Add the salt, sugar and lime juice. Mix everything well. Taste the mixture and adjust accordingly.
Pour the mixture into molds, upto ¾ full (leave a gap as liquip expands in the freezer). Cover and insert the popsicle sticks.
(In case you don't have popsicle molds, use paper cups and wooden sticks.)
Place the filled popsicle molds in the freezer.
Freeze for 2-4 hours, or until completely set.
To remove the popsicles from the molds, run the bottom of the molds under warm water for a few seconds. This will loosen the popsicles, making them easier to remove.
Gently pull on the sticks to release the popsicles.

Notes
Add in some chopped fresh mint or basil for a refreshing herbal note, or mix in some small chunks of fruit like kiwi, mango or strawberries for added texture.
To sweeten, you can also use honey, maple syrup, or cane sugar
