Beet and Peanut Salad Recipe

Vegan raw beet salad is an excellent combination of flavours. I just love the crunch of the peanuts against the soft beets. Full of natural goodness, this is a very good salad for those who don't care for beets.

Ingredients

  • 1 cup grated beetroot
  • ½ cup grated carrot
  • 2 green chillies chopped finely
  • 2 tbsp chopped onions
  • 1/8 cup peanuts
  • ½ tsp salt
  • 1 tbsp lemon juice
  • 1/8 tsp of chopped coriander leaves

Instructions

  • To make this beet and peanut salad, firstly heat oil in a shallow pan and fry the peanuts till well browned and crunchy. Remove the peanuts with a slotted spoon onto a plate and allow to cool.
  • Next grate the carrots and beetroots. Keep aside.
  • Finely chop the onions, green chillies and coriander leaves.
  • Take a large bowl and add the grated carrot and beet to it. Put in the chopped onion, chillies, coriander and roasted peanuts. Season with salt and gently toss.
  • Lastly, drizzle lemon juice and combine well.
  • Serve fresh Beet and Carrot Salad with Pulao and Raita
