- For this grated beet and peanut salad, firstly heat some oil in a small kadai. Add the raw peanuts and fry till they start to pop. Remove and keep aside to cool.
- Next wash the beetroots and carrots well. Top and tail them and then grate them. Keep aside.
- Also finely chop the onion, green chillies and coriander leaves.
- In a large serving bowl, combine the grated beet, grated carrot, chopped onions, green chillies. Season with salt.
- Add peanuts and chopped coriander.
- Drizzle fresh lemon juice and toss the beetroot carrot salad well to combine.
- Serve Beet Salad with Sesame Rice and Spinach Raita.

Beet and Peanut Salad Recipe
Ingredients
- 1 cup grated beetroot
- ½ cup grated carrot
- 2 green chillies chopped finely
- 2 tbsp chopped onions
- 1/8 cup peanuts
- ½ tsp salt
- 1 tbsp lemon juice
- 1/8 tsp of chopped coriander leaves
Instructions
- To make this beet and peanut salad, firstly heat oil in a shallow pan and fry the peanuts till well browned and crunchy. Remove the peanuts with a slotted spoon onto a plate and allow to cool.
- Next grate the carrots and beetroots. Keep aside.
- Finely chop the onions, green chillies and coriander leaves.
- Take a large bowl and add the grated carrot and beet to it. Put in the chopped onion, chillies, coriander and roasted peanuts. Season with salt and gently toss.
- Lastly, drizzle lemon juice and combine well.
