To make this beet and peanut salad, firstly heat oil in a shallow pan and fry the peanuts till well browned and crunchy. Remove the peanuts with a slotted spoon onto a plate and allow to cool.
Next grate the carrots and beetroots. Keep aside.
Finely chop the onions, green chillies and coriander leaves.
Take a large bowl and add the grated carrot and beet to it. Put in the chopped onion, chillies, coriander and roasted peanuts. Season with salt and gently toss.
Lastly, drizzle lemon juice and combine well.
