Carrot Walnut Cake Recipe:

This is a deliciously rich and flavourful cake infused with the flavour of freshly grated carrots and walnuts. This classic cake recipe is for keeps.

Try this absolutely divine moist cake with walnuts and carrots in every bite. You’ll soon become a carrot cake fan!

  • Preheat oven to 180°C.
  • Grease and lightly flour a round cake pan.
  • In a medium bowl, add the vegetable oil and eggs; beat the mixture till nice and frothy.
  • Mix in the sugar and continue to beat well.
  • In another bowl, add ground nutmeg, ground cinnamon, grated carrots, coarsely crushed walnuts, baking soda and baking powder. Add these ingredients to the prepared batter.

  • Next, fold in the flour and combine well until the flour is well incorporated. Don’t overmix.

  • Bake at 180°C for about 45 minutes in the pre-heated oven.
  • Insert a toothpick into the centres and if it comes out clean, the cake is ready.
  • Let the cake cool in the pan for about 10 minutes before inverting onto a cooling rack.
  • Serve deliciously moist and nutty Carrot Cake with a slight dusting of powdered sugar.

Ingredients

  • Self raising flour - 2 ½ cups
  • Eggs - 3
  • Baking powder - 3 tsp
  • Baking soda - 1 tsp
  • Ground nutmeg – ¼ tsp
  • Ground cinnamon - ½ tsp
  • Vegetable oil – 1/3 cup
  • Brown sugar - 1 ½ cup
  • Walnuts – 1 cup, coarsely ground
  • Carrots – 2 cups, grated

Instructions

  • To make the best ever carrot cake, pre-heat the oven to 180 degree C
  • Mix the eggs and vegetable oil and beat the mixture until it turns fluffy.
  • Add sugar and continue beating the mixture.
  • In a different dish add the ground walnuts, grated carrots, ground nutmeg, cinnamon, baking soda and powder.
  • Add this mix to the (2, 3) eggs and sugar.
  • Now, add the flour and mix well. You will get a cake mix that is thick in consistency.
  • Apply butter/vegetable oil on the walls of your baking dish.
  • Transfer the cake mix to the baking dish and bake at 160-180 degrees for 45 minutes.
  • Stick a toothpick in the centre of the walnut carrot spice cake after 45 minutes and if it comes out clean, your cake is ready.
  • Once done, leave the Carrot and Walnut cake to cool.
  • Cut into slices and serve yummy Carrot and Walnut Cake with a scoop of ice-cream!

Notes

*You can add 1/2 tsp of dry ginger, 1/2 tsp of ground cinnamon and 1/2 tsp of ground nutmeg to the cake mix.
