Anda Bhurji Mumbai Street Style is a scrumptious scrambled eggs recipe, flavoured with Indian spices. Egg bhurji, cooked with tomatoes and onion, aromatic spices, whisked eggs and a dollop of butter, is a delicious twist to classic scrambled eggs.

The fusion of desi flavours, the goodness of eggs, the riot of colours – there is so much to love about this yummy, comforting, masala egg bhurji. Eggs are my favorite and I can have them any time of the day …and Anda Bhurji Mumbai Street Style is a great way to enjoy this spicy egg-y goodness.

  • To make Egg Bhurji, firstly finely chop the onion, tomato, capsicum, green chillies, ginger and coriander leaves.

  • Break three eggs into a bowl.

  • Whisk the eggs and keep aside.

  • Next, in a nonstick skillet, heat oil over medium heat and sizzle cumin seeds.

  • Then add the chopped onions, green chillies and ginger.

  • Sauté until the onions turn soft and translucent, about 3-4 minutes.

  • Put in the chopped capsicum.

  • Sauté for 1-2 minutes.

  • Then add the tomatoes.

  • Combine well.

  • Cover and cook until most of the excess moisture has evaporated.

  • Now add the spices – turmeric powder, salt, chilli powder and Pav Bhaji masala.

  • Combine well and cook until the oil separates.

  • Drop in a dollop of butter.

  • Mix well with veggies and masalas until it melts.

  • Turn the heat to low. Pour in the eggs.

  • Gently stir, till soft curds begin to form.

  • Then scramble the eggs by breaking them up.

  • Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes.

  • Add the chopped coriander leaves.

  • Mix in the coriander.

  • Remove from heat, and transfer into a serving dish.

  • Serve Anda Bhurji Mumbai Street Style with lightly toasted bread or flaky paratha

Ingredients

  • 2 tbsp oil
  • ¼ tsp cumin seeds
  • ½ cup onion chopped
  • ½ cup tomato chopped
  • 1/3 cup capsicum, chopped
  • 1 tsp ginger grated
  • 2 green chillies chopped
  • 3 eggs
  • 1/8 tsp turmeric powder
  • 1/8 tsp red chilli powder
  • ½ tsp salt
  • ½ tsp Pav Bhaji masala
  • ½ tbsp. butter
  • 1 tbsp coriander leaves chopped

Instructions

  • To make Egg Bhurji, firstly finely chop onions, green chillies, tomatoes, ginger, capsicum and coriander leaves.
  • Whisk the eggs and keep aside.
  • Then heat oil in a non-stick skillet over medium heat and put in the cumin seeds.
  • Once they start to sizzle, add the chopped onions, green chillies and ginger. Sauté until the onions turn translucent.
  • Drop in the chopped capsicum and sauté for 1-2 minutes.
  • Put in the tomatoes and cook till the tomatoes become soft and mushy.
  • Season with salt, turmeric, red chilli powder and Pav Bhaji Masala.
  • Sauté till the masalas are well blended.
  • Add butter and stir till it melts.
  • Then lower the heat and pour in the beaten eggs.
  • Using a spatula, scramble the eggs till they are almost cooked.
  • Garnish with coriander leaves.
  • Serve Spicy Egg Bhurji with buttered toast or paratha
