How to make Kerala Sweet Wheat Flour Ada:
Gothambu Ada Kerala style is an awesome dish which has a wheat flour covering and a jaggery-coconut filling. Kerala Atta Pancakes with coconut jaggery is a filling and wholesome dish with a distinct aroma. Gothambu Pancakes are a healthy alternative to a quick breakfast or a filling tea-time snack.
To make Sweetened Pancakes with Atta, firstly mix together whole wheat flour, salt and water to make a thick batter.
Then, in another bowl combine grated jaggery, coconut, ginger powder and cardamom powder. Mix well and set aside.
Heat a dosa pan and smear some oil on it. Now drop 2-3 spoonfuls of the batter on the tava and slowly spread it around like a dosa.
Next sprinkle the jaggery-coconut mixture over the Wheat Ada and fold in half.
Then flip the sweet wheat flour pancake and let it cook. Gently press down with a spatula.
When both sides turn brown, fold and remove Atta Ada onto a plate.

Ingredients
Wheat flour/Atta - 2 cups
Water as required
Grated coconut- 1 cup
Grated jaggery/brown sugar - 1 cup
Dry ginger powder - ¼ teaspoon
Cardamom powder- ¼ teaspoon
Salt to taste
Oil – ¼ tsp per ada
Instructions
Mix water, flour and salt to make the batter. It should be slightly thicker in consistency than the dosa batter.
In a separate container, mix the grated coconut, jaggery, cardamom and dry ginger powder. Keep it aside.
Heat a tawa and apply some oil on the tawa.
Pour 2-3 teaspoon full of batter on the tawa and spread it to make a dosa like circle. Wheat flour batter sticks to hot tawa so keep the flame low. It doesn’t spread out as easily as dosa batter, so use a spoon instead of a ladle and spread out slowly.
Spread the coconut and jaggery mix on the wheat dosa and fold it to half.
Turn both sides and let it cook for about 1 minute. While cooking, slowly press on both sides using a spoon.
Wheat Flour Ada is ready to be served with a hot cup of tea.
